There's regular cornbread, and then there's Pit Boss Cornbread. Baked in a wood pellet grill or smoker, our version has a bit of wood-fired flavor that makes it stand out from the rest. Fuel up with our Fruitwood Blend Hardwood Pellets for just the right touch of smoky flavor.
Directions
- Pre-heat smoker to 350°F.
- Place the cast iron skillet in the smoker away from heat source while the smoker reaches temperature.
- In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and Pit Boss GSP Rub.
- Then add the milk, eggs, sour cream, honey, and melted butter. Mix everything together well until it is mostly smooth, but do not overmix.
- Carefully remove the hot cast iron from the smoker. Pour the batter into the cast iron, then place cast iron back into smoker.
- Let it cook for 30 to 35 minutes, or until it is totally set and golden brown on top.
- Remove from smoker and let rest for 15 minutes, then enjoy!
