Ingredients


8 Bacon Slices

1/3 cup BBQ Sauce

1/2 cup Bell Pepper, chopped

1 1/2 cup Cheddar Cheese, Shredded

2 cups Cooked Brisket, chopped

2 tsp Hickory Bacon Rub Seasoning

1 Jalapeño, minced

1 tbsp Olive Oil

1 Yellow Onion, chopped

4 Zucchinis, whole



Cooking Instructions


Whoever said veggies are boring never tried these Brisket-Stuffed Zucchini Boats. Low-carb and keto friendly, these decadent boats are stuffed with smoky chopped brisket, peppers, BBQ sauce, cheddar cheese then wrapped in bacon. The bacon crisps up in the cast iron skillet as the zucchini tenderizes and cheese melts for a gooey, meat treat the whole family will love.

Wood Pellet Recommendation

In order to bring out the smoky, bacon-like flavors in this recipe, we recommend using our Hickory Hardwood Pellets.

Note: This recipe uses Pit Boss Grills Hickory Bacon Rub Seasoning.

  1. Fire up your Pit Boss grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 350° F. If using a gas or charcoal grill, set it up for medium heat. Place a cast iron skillet on the grill and allow to preheat.
  2. Add oil to the preheated skillet, then sauté the onion for 2 minutes, until translucent. Add the bell pepper, jalapeño, and season with Hickory Bacon. Sauté for 2 more minutes, then stir in the cooked brisket and heat for 2 more minutes. Remove skillet from the grill and transfer contents to a mixing bowl. Cool for 5 minutes.
  3. Trim the ends off the zucchini. Cut the zucchini in half lengthwise, scoop out the pulp, then set zucchini halves on a sheet tray.
  4. Add shredded cheese and BBQ sauce to the bowl of brisket filling. Divide the filling among the zucchini. Wrap each in bacon, then transfer to cast iron skillets.
  5. Set the skillets on the grill, and cook for 25 minutes, until zucchini is tender and bacon begins to crisp. Remove zucchini boats from the grill and serve warm.
