Green Chili Pork Frito Pie

Crunchy, cheesy, and easy, this Frito Pie recipe is great for weeknight meals and game day celebrations alike! This wood-fired recipe features simple ingredients that will have your friends and family coming back for more.

Ingredients

  • 2 lb. large dice pork tenderloin
  • 1 medium yellow onion, small diced
  • 6 garlic cloves, chopped
  • 10 fire-roasted hatch chiles, peeled with no seeds
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 bunch chopped cilantro
  • 2 tbsp dried oregano
  • 1 qt chicken or pork stock
  • 1 tsp cumin
  • 1/2 tsp Coriander
  • 2 tbsp salt
  • 1 can fire-roasted tomatoes, drained and lightly rinsed
  • 1 bag of Fritos
  • Shredded smoked cheddar cheese - for garnish
  • Pickled onion – for garnish

Directions

  • Preheat your Pit Boss grill to 275°F
  • Once your grill is up to temp, place an empty Dutch oven directly on the grill grates to heat up.
  • Next, mix flour with diced pork, then melt butter in preheated Dutch oven. Add diced pork and sauté until pork is light golden brown.
  • Once you have sautéed your pork, add the garlic and onion, then reduce the heat to medium and sweat the vegetables until they are translucent in color.
  • Next, add the stock, cilantro, oregano, cumin, chilies, coriander, and canned tomato, then reduce the liquid by half before removing from the heat and seasoning with salt.
  • Finally, serve over a bed of Fritos and garnish with smoked cheese and pickled onion.
