This one-pot chili recipe is best served with friends and family on a crisp fall evening, and makes the perfect easy weeknight dinner. This time, ditch the stovetop and make this Pork Green Chili right on the pellet grill. Using a heavy-duty cast iron pot or dutch oven, you can craft this meal, start to finish, from your backyard.

Ingredients
2 lb. large dice pork tenderloin
1/4 cup all-purpose flour
1 qt chicken or pork stock
1 bunch chopped cilantro
2 Tbsp Dried Oregano
1 Tsp Cumin
10 fire-roasted hatch chiles, peeled with no seeds
1/2 tsp Coriander
1 14.5 oz. can fire roasted tomatoes, drained and lightly rinsed
1 25 oz. can white hominy
1 jar green chili salsa
2 tbsp salt
Directions
Preheat your Pit Boss grill to 275°F.
Once your grill is up to temp, place an empty Dutch oven directly on the grill grates to heat up. Option to open your grill's sear plate.
Coat pork in flour and melt butter in preheated Dutch oven. Once butter is melted, add pork and sauté until light golden brown.
Once you have sautéed your pork, add the garlic and onion, then reduce the heat to medium by closing you grill's sear plate and sweat the vegetables until they are translucent in color.
Then add the stock, cilantro, oregano, cumin, chilies, coriander, canned tomato, hominy, and salsa and reduce the liquid by 1/3. This will take about 30 minutes, stirring often.
Remove from the heat and seasoning with salt. Garnish with cheese and cilantro and enjoy!
