This chimichurri aioli combines fresh, homemade chimichurri sauce with everyone's favorite, mayo, to create a creamy and savory aioli that goes great with any grilled creation.

Ingredients

  • 2 cups parsley, finely chopped
  • 4 Garlic Cloves
  • 4 fresh bay leaves, chopped
  • 1 1/2 tsp dried oregano
  • 1 tsp Red Pepper Flakes
  • 1 tsp Salt
  • 1 Tsp Black Pepper
  • 1 cup avocado oil
  • 1/4 Cup Red Wine Vinegar
  • 1 cup Mayo

  • Food Processor
  • Bowl

Directions

  1. First, make a basic chimichurri sauce by adding all ingredients except for the mayo into a food processor and blend for 3-5 minutes.
  1. Allow the mixture to sit for 15 minutes before adding in your mayo to create an aioli. Use 1 cup of chimichurri sauce to 1 cup of mayonnaise for the perfect consistency.
  1. Spread on sandwiches or drizzle over your favorite grilled meals!
