Ingredients

  • 3 lb. butter diced
  • Lemon Zest
  • 1 1/2 Cups Chopped Dill
  • 1 1/2 Cups Capers “Rinsed”
  • 1 Tbsp Salt
  • 1 Tbsp Black Pepper
  • 4 portions of Salmon (6-7 oz each)
  • 2 Cedar Planks
  • 10 oz dill compound butter

Special Tools

  • Cedar Planks

Directions

  1. Create the Compound Butter by combining the butter, lemon zest, dill, capers, salt, and pepper, and allow it to soften to room temperature.
  1. Place both cedar planks in a container of water, and let soak for 10-20 mins, ensuring the planks are fully submerged.
  1. Preheat your Pit Boss® Grill to 325°F
  1. Once the planks are done soaking, remove them from the water, and place them on the Pit Boss to preheat.
  1. Section half of the compound butter, about 5 oz, and spread evenly atop the salmon portions. Use the other half of the butter to spread on the preheated cedar planks.
  1. Once the cedar planks and the salmon portions have been buttered, position the salmon onto the cedar planks. Then, place the planks directly on the upper rack of your pellet grill and bake for 15 minutes, or until desired tenderness.
  1. Remove from the pellet grill, and enjoy!
