Ingredients

  • 8-14 lbs. Sam’s choice spiral cut honey cured double glaze ham (do not use spice mix it comes with)
  • 1/2 cup brown sugar
  • 1/2 cup apricot jam
  • 3 tablespoons dijon mustard
  • 1/2 cup fresh orange juice (freshly squeezed)

Directions

  1. Set smoker to 300°F.
  1. Take ham out of its packaging, transfer to an aluminum pan, and pat dry.
  1. Lightly sprinkle the Pit Boss Texas BBQ Rub all over the ham, then place in smoker and let cook for 2 to 2 ½ hrs. or until internal temperature reaches above 150°F.
  1. Halfway through the ham’s cook time, make the glaze. In a bowl, combine the brown sugar, apricot jam, dijon mustard, and orange juice.
  1. When there is less than 1 hour left, baste the ham with the glaze, coating heavily. Try to get in between the cuts without tearing the meat, and return to the smoker.
  1. Let the ham rest before cutting into it, then enjoy!

Recipe Note

When cooking with ham, keep a wire rack in the pan to help with cleaning and to give a more exposed area for the heat and smoke to penetrate.

The best way to step your ham game up is to give it a great glaze. Try this tip: once you stick your ham in your smoker, brush your ham with the glaze every 20 minutes until it is done cooking.
