Ingredients

  • 1 lb. ground beef
  • 1 bell pepper
  • 1 lb. yellow potatoes
  • 8 Eggs
  • 1/2 yellow onion
  • 1/2 tbsp paprika
  • 1/2 tbsp salt + pepper
  • 1 Tbsp Olive Oil
  • Chopped parsley for garnish

  • Microwavable meal prep containers

Directions

  1. Preheat your Pit Boss® grill to 425°F. Chop the potatoes, bell peppers and onions and add them to a skillet with olive oil and seasonings. Mix well to coat the vegetables.
  1. Place the skillet on the grill and close the lid for 15 minutes.
  1. Add the ground beef to your skillet, and mix to combine. Cover for another 7 minutes.
  1. Crack the eggs over the hash, and let cook for 7-10 minutes. Eggs yolks should be slightly firm.
  1. Remove from the grill, rest, and top with chopped parsley.
  1. Enjoy right away, or distribute into meal prep containers and reheat throughout the week!
