Directions
- Preheat your Pit Boss Grill to 400°F.
- While your grill is heating up, place the chicken, breast side down, on a cutting board.
- Using a pair of kitchen shears, cut the backbone of the chicken out, and snip the tips of the wings off.
- Flip the chicken over, add a binder if desired, and season the chicken on all sides with your chosen rub.
- Once the chicken has been seasoned, place it, breast side up, directly on the grill grates. We recommend placing it on the top rack of your smoker.
- Cook to an internal temperature of 165°F, rotating every 10 mins for even color.
- Remove from the smoker and let rest for 10-15 mins before carving.
