Smash Tacos

These tacos will be a smash hit at your next backyard bbq, tailgate, or get-together. Easy to make, and even easier to customize, this recipe is one that the whole family will enjoy. We topped ours with Melissa's Pinkglow® Pineapple so each bite is better than the next.

Ingredients

  • 1 lb. Johnsonville Chorizo
  • 1/2 Cup minced or shredded cabbage
  • 1/2 Cup Pico de gallo
  • 1/4 Cup Melissa’s Produce pink pineapple, diced small (regular works, too)
  • 6 4-in. flour tortillas
  • 1/2 cup shredded Oaxaca cheese

Directions

  • Preheat your Pit Boss Ultimate Griddle to medium/high heat
  • While your griddle is heating up, divide the Johnsonville chorizo into 6 equal portions and roll them into balls.
  • Next, equally space the chorizo portions onto your griddle's cooking surface, place tortillas over the top of each portion, and press flat.
  • Allow each portion to sear for 3-5 mins before flipping to cook the tortilla side for an additional 2-3 minutes.
  • Finally, remove each taco from the griddle and top with cheese, cabbage, pico de gallo, and diced Pinkglow® pineapple.
  • Enjoy!
