Lamb doesn't just have to be for Easter! These grilled lamb chops are a delicious and easy way to try a new protein and impress your family and friends. For an extra impressive finish, garnish with springs of rosemary!

Ingredients

  • 2 Tbsp Chophouse Steak Rub
  • 2 pounds thick cut rib chops or Lamb Loin
  • Juice from 1/2 Lime
  • 3 Tbsp Orange Juice
  • 4 Garlic Cloves, Minced
  • Juice from 1/2 Lemon
  • 1/4 cup olive oil
  • 1/4 Cup Red Wine Vinegar

Directions

  • In a mixing bowl, whisk together all the ingredients and 2 Tbsp Pit Boss Chophouse Steak Rub. Place the lamb chops in a glass baking pan and pour the marinade over the top. Flip the chops over a few times to make sure that they are completely coated.
  • Cover the glass pan in aluminum foil and allow the lamb chops to marinade for 4-12 hours. Once the meat has finished marinating, drain off the excess marinade and discard.
  • Fire up your Pit Boss and set the temperature to 400°F. If you're using a gas or charcoal grill, set it up for medium high heat. Grill the chops for 5-7 minutes per side, then lower the temperature to 350°F or medium heat, and flip and grill for another 5-7 minutes.
  • Remove the lamb chops from the grill, cover in foil, and allow to rest for 5 minutes before serving.
