Directions
- To achieve a crispy chicken skin, pat skin dry and apply kosher salt to both sides of the chicken, leave in the refrigerator to dry out on a wire rack at least one hour prior to cooking.
- Before cooking, prepare the potatoes and carrots by seasoning with Olive Oil, Salt, and Pepper.
- Preheat the smoker to 350°F.
- Season both sides of chicken with Pit Boss Sweet Rib Rub.
- Place chicken, potatoes, carrots, Rosemary, and Thyme in Cast Iron Pan.
- Place cast iron pan in smoker and cook for 2.5 to 3 hours until chicken is done (165°F) and potatoes are fork tender.
- Rest chicken for 10 minutes before cutting.
