Roasted Buffalo Cauliflower

Everyone's favorite Buffalo-style sauce meets fresh cauliflower in this easy-to-follow pellet grill roasted recipe. Made with hot sauce and butter for a quick bite that's perfect as a party appetizer or as a side to your other barbecued creations.

Ingredients

  • 1 large head of cauliflower, fresh
  • 3 tbsp butter, softened
  • 1/3-1/2 cup Franks RedHot Sauce
  • Pit Boss GSP Rub
  • 1/4 cup blue cheese crumbles

Directions

  • Preheat pellet grill to 400°F
  • Cut or break apart the cauliflower into equal-sized pieces.
  • Place a sauté pan in the center of the lowest grill grate and preheat the pan for 2-3 minutes.
  • Add butter to coat the pan, then add cauliflower pieces.
  • Open the sear plate for a direct flame, and stir the cauliflower every couple of minutes.
  • Once the cauliflower is golden brown, close the sear plate and add hot sauce to the pan.
  • Move the pan off to the side, season with GSP (or garlic, salt, and pepper), and cook for another 2-3 minutes.
  • Plate the cauliflower and top with blue cheese crumbles. Serve immediately.
