Pulled Pork Quesadilla

Get the most out of your leftovers when you make these pulled pork quesadillas. They're stuffed with pulled pork, cheese, and veggies, then cooked to golden, crispy perfection. This recipe is sure to be your new griddle go-to!

Ingredients

  • 2 12 in. flour tortillas
  • 12 oz. shredded or pulled Oaxaca cheese
  • 2 cups mixed peppers and onions
  • 2 1/2 cups pulled pork

Directions

  • On medium heat, saute peppers, onions, and pulled pork on your griddle.
  • Place both tortillas on the griddle for one minute and flip.
  • Add cheese to your tortillas, then add the pulled pork and veggies, making sure you spread them evenly.
  • Cook for 5 minutes, or until the cheese has melted. Fold each quesadilla in half.
  • Flip after 3 or 4 mins or until golden brown, flip and repeat.
  • Enjoy!
