Pulled Pork Breakfast Burritos

Pulled pork? For breakfast? Why not! This Pulled Pork Breakfast Burrito recipe is the perfect way to finish off any leftover pulled pork. Roll it up in a tortilla with some cheese, scrambled eggs, and your choice of toppings. The options are endless!

Ingredients

  • 1/2 cup barbecue sauce
  • 1/2 Cup Cheddar Cheese, Shredded
  • 1 Onion, Sliced
  • 2 Cups Leftover Pulled Pork
  • 1 Tablespoon Salsa
  • 1/2 Cup Rinsed & Drained Black Beans, Can
  • 1 Cup Scrambled Egg
  • 1/2 Tablespoon Pit Boss Homestyle Pork Rub
  • 1 Red Pepper, Strips
  • 4 Extra Large Tortilla

Directions

  • Preheat your Pit Boss grill to 350°F. Toss the peppers and onions with Pit Boss Homestyle Pork Rub and grill until soft, about 5-7 minutes. Remove from the grill and let cool.
  • To assemble the breakfast burritos, combine the pulled pork with the barbecue sauce, then top the tortilla with a small amount of pork, eggs, black beans, onions and pepper, shredded cheese and salsa. Roll into a burrito and repeat with the remaining burritos.
  • Grill the burritos for 3 minutes on each side, or until the tortillas are crisp and browned. Remove from the grill and serve immediately.
