Ingredients
Russet potatoes
Olive oil
Pit Boss Smoked Salt & Pepper
Garlic powder
Onion powder
Cayenne pepper
Shredded cheddar cheese
Bacon bits
Sour Cream
Green onions, sliced thin
Directions
Preheat your pellet grill or smoker to 400°F.
Slice potatoes into 1/2 inch thick coins and place in bowl. Add olive oil and seasonings, enough to coat well.
Place potatoes on a wire rack and bake in your smoker for 30-40 minutes flipping half way through.
When coins are tender, top with shredded cheese and bacon bits.
Place back in smoker until cheese has melted.
Remove from smoker, garnish with sour cream and onion, and enjoy!
