Ingredients

  • 2 1/2 lb. red onion, thinly sliced
  • 1 oz. garlic, thinly sliced
  • 1 qt white wine vinegar
  • 1 1/4 cups sugar
  • 2 tbsp Salt, Kosher

Directions

  • In small pot add vinegar, sugar, and salt. simmer just long enough to dissolve sugar and salt.
  • Remove from heat and chill the brine in an ice bath to 40 degrees.
  • Pour brine over sliced onions and garlic.
  • Store in refrigerator for 24 hours before use.
