Directions
- preheat pellet grill or vertical smoker to 325°F. Grease the cast iron and place on grill to preheat.
- Make brownie mix according to box instructions, then fold in marshmallows.
- Using a sifter, sift the crushed peppermint to separate out the smaller granules. Add the small granules into the brownie mix and fold.
- Remove the heated cast iron from the grill and add the brownie mixture.
- Place the cast iron back on the grill and allow to bake for 10 minutes
- Add the larger pieces of peppermint to the top of the brownies, then continue to bake for another 8-15 minutes - depending on box's recommended cooking time.
- Insert a toothpick into the center of the brownie to check for doneness. Continue to bake until no batter residue sticks to the toothpick.
- Once done, allow to cool to room temperature before topping with salted caramel and serving.
