Peppermint Marshmallow Brownies

Everyone knows brownies are better when baked to gooey perfection on the Pit Boss pellet grill. This time, add crushed peppermints and marshmallow for a treat that's great for a Holiday side dish or a late night dessert. 

Ingredients

  • 1 18.3 oz. box fudge brownie mix
  • 10 crushed peppermint sticks
  • 3/4 cup mini marshmallows
  • Caramel Sauce

Directions

  • preheat pellet grill or vertical smoker to 325°F. Grease the cast iron and place on grill to preheat.
  • Make brownie mix according to box instructions, then fold in marshmallows.
  • Using a sifter, sift the crushed peppermint to separate out the smaller granules. Add the small granules into the brownie mix and fold.
  • Remove the heated cast iron from the grill and add the brownie mixture.
  • Place the cast iron back on the grill and allow to bake for 10 minutes
  • Add the larger pieces of peppermint to the top of the brownies, then continue to bake for another 8-15 minutes - depending on box's recommended cooking time.
  • Insert a toothpick into the center of the brownie to check for doneness. Continue to bake until no batter residue sticks to the toothpick.
  • Once done, allow to cool to room temperature before topping with salted caramel and serving.
