Directions
- Preheat pellet grill or smoker to 325°F.
- Place a stick of butter (or 1/2 cup) in a 12 inch cast iron skillet and place it on upper rack of the grill.
- In a medium mixing bowl, combine sugar, flour, baking powder, cinnamon, vanilla, salt, and milk.
- Once the butter has melted in the skillet, pour the batter evenly around the pan. Do not stir. Then, add the peaches evenly across the top of the batter. Again, do not stir.
- Place cast iron back on the upper rack and bake for 45 minutes to an hour, rotating the pan every 15 minutes to ensure even cooking.
- Once the batter has set, remove from the grill and cool for 15-20 minutes before serving.
