Mile-High Meatball Flatbread

Piled high with delicious meatballs, char-grilled asparagus, and parmesan cheese, this meatball flatbread is perfect for a weeknight dinner at home!

Cooking Method 🔥

This recipe calls for a touch of open flame. Thankfully, Pit Boss Grills come standard with a Flame Broiler, so you can achieve direct flame searing up to 1000°F. Then, when it's time to smoke or bake, simply close the sear plate and drop the temperature low to add that steady kiss of smoke to your dish.

Ingredients

  • 10 meatballs of your choice
  • 1 can diced tomatoes
  • 1 piece of flatbread, your choice
  • 16 pieces of asparagus
  • Avocado oil
  • 1/4 cup shredded parmesan cheese
  • 1/2 oz. broken basil leaves
  • 6 cherry tomatoes cut in half

Directions

  • First, preheat your Pit Boss to 350-400°F
  • Next, open the sear plate and place a cast iron skillet over the open flame.
  • Add 3 tbsp of avocado oil to the cast iron skillet, then sear the meatballs on all sides.
  • Add the diced tomatoes, close the sear plate, and bake at 350°F for about 15 mins
  • Next, pull the cast iron off grill, open the sear plate, and turn your grill back up to 500°F
  • Char or grill your asparagus over the open sear plate, then set aside, and quickly toast your flatbread in the same manner.
  • Now it’s time to plate! Start by laying the flatbread down on a plate or shallow bowl, then top with the grilled asparagus, meatballs, and cooked tomatoes.
  • Feeling Fancy? Garnish your dish with finely grated parmesan, basil, and cherry tomatoes.
