Mashed Potatoes

Classic mashed potatoes get a wood-fired upgrade in this simple side dish recipe. By roasting your potatoes on your pellet grill or smoker, they're infused with the smoky flavor of hardwood BBQ pellets before being mashed with creamy cheese, butter, and milk. Scoop this dish up at your next friends and family dinner, or serve as a quick side to a grilled dinner. 

Pro Tip: To ensure fluffy, non-sticky mashed potatoes, use warmed or room-temperature butter, milk, and cheese and try not to over work your potatoes by stirring too much.

Ingredients

  • 2 lb. russet potatoes, skin on
  • Oil
  • 1/4 lb. butter, softened
  • 1 Boursin cheese, room temperature
  • 1/2-1 cup whole milk, warmed
  • Salt and pepper, to taste
  • Chives, finely chopped

Directions

  • Preheat pellet grill or smoker to 300°F.
  • Rinse and scrub the potatoes. Pat dry, then coat with oil and salt.
  • Place the potatoes directly on the upper rack of your grill or smoker and bake until fork tender. Depending on the size of your potatoes, this can take 25-45 minutes.
  • Once fully cooked, remove from grill and peel immediately.
  • Place potatoes in a large mixing bowl and add butter, 1/2 cup warmed milk, and cheese.
  • Using a whisk, whip the potatoes. Add more milk or butter until preferred consistency is reached and season to taste.
  • Top with chives and serve immediately.
