Directions
- Preheat grill to 400°F.
- Coat the sliced mango with a little avocado oil to prevent from sticking to the grill when cooking, then season with Mango Magic BBQ Rub and set aside.
- Coat the shrimp with oil to prevent sticking to the grill when cooking, season with Mango Magic Rub, then set aside. Optional: place shrimp on skewers.
- Grill the mango on the lowest rack just enough to add grill marks and warm the pieces through. Remove from grill, dice, and set aside.
- Open your grill's sear plate for direct flame access and grill the shrimp about 4-5 minutes each side (either on the skewers, or individually).
- Remove shrimp from the grill, then toss or baste with melted butter and more seasoning, as desired.
- Serve grilled shrimp over a bed of grilled mango, and enjoy!
