Lost and Found Brisket Quesadilla

We know it isn't always the case, but sometimes there's leftover brisket taking up space in the fridge (we don't judge). And sometimes, you really want a quick and easy quesadilla cooked on the flat top griddle. Well, you're in luck! Chef Kirk shows us how to make his "Lost & Found Brisket Quesadilla" with simple ingredients and leftover smoked brisket meat. Paired with homemade charred salsa and your favorite condiments, and you've got a lunch fit for a king— or a whole bunch of 'em.

Ingredients

  • 12 oz. leftover brisket
  • 1 lb. mozzarella cheese
  • 1/2 red bell pepper, thinly sliced
  • 1/2 medium-sized onion, thinly sliced
  • 2 large flour tortillas
  • Homemade Charred Salsa

Directions

  • Set your gas flat top griddle to medium heat.
  • Sauté your peppers and onions for 3-4 minutes until they soften.
  • Add your chopped or sliced leftover brisket. Cook for an additional 3-4 minutes until the brisket is warmed through.
  • Turn one burner to low heat and move hot peppers, onions, and brisket to the low heat side.
  • Add both tortillas to the hotter side of the griddle and warm for 1-2 minutes on each side. Flip, then add cheese to the tortillas.
  • Split the onion, pepper, and brisket mixture between the two quesadillas.
  • Fold in half and allow to toast for 3-4 minutes on each side or until golden brown and cheese is completely melted.
  • Remove from the griddle and cut each quesadilla into 4 equal size pieces.
  • Serve with salsa and favorite condiments!
