Directions
- Preheat your Pit Boss to 300°F
- Meanwhile, combine softened butter, rosemary, mint, salt, onion powder, garlic powder, and mustard in a bowl, and set aside
- Next, apply the binder of your choice to the lamb, and season it with the Pit Boss Smokey Salt and Cracked Pepper Rub
- Then, open the flame broiler, place the Lamb directly on the grates, and direct-sear over an open flame for about 2-3 mins on each side
- Once your lamb has been seared, close the flame broiler, and cook for about 20-25 mins, or until you reach an internal temperature of 135-137°F
- Remove from the grill, let rest, and slice
- Finally, top with fresh rosemary mint compound butter and enjoy
