Lamb Rack with Rosemary Mint Compound Butter

Spring Grilling at its finest! This Rack of Lamb recipe features a fresh rosemary mint compound butter that will have your friends and family coming back for more. The best part? Everything's done on the Pit Boss, so the flavor is next level.

Ingredients

  • 1/2 lb. Softened Butter
  • 1 oz Fresh Mint
  • 1 1/2 Tsp Fresh Rosemary, chopped
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Dijon Mustard
  • 14-16 oz Rack of Lamb
  • Pit Boss Smoked Salt & Pepper Rub

Directions

  • Preheat your Pit Boss to 300°F
  • Meanwhile, combine softened butter, rosemary, mint, salt, onion powder, garlic powder, and mustard in a bowl, and set aside
  • Next, apply the binder of your choice to the lamb, and season it with the Pit Boss Smokey Salt and Cracked Pepper Rub
  • Then, open the flame broiler, place the Lamb directly on the grates, and direct-sear over an open flame for about 2-3 mins on each side
  • Once your lamb has been seared, close the flame broiler, and cook for about 20-25 mins, or until you reach an internal temperature of 135-137°F
  • Remove from the grill, let rest, and slice
  • Finally, top with fresh rosemary mint compound butter and enjoy
