Directions
- Preheat your wood pellet grill to 300°F
- Pat the chicken wings dry with a paper towel, then season with a general-purpose BBQ rub (We recommend the Pit Boss Smoked Salt & Pepper Rub).
- Place the wings directly on the grill grates and smoke until they reach an internal temperature of 165°F.
- While the wings are cooking, combine the brown sugar, soy sauce, Gochujang, sesame oil, rice vinegar, fish sauce, and minced garlic in a saucepan. Simmer over low heat until the sauce thickens slightly, about 5-7 minutes.
- Once the wings are smoked, increase the temperature of the grill to 400°F. Heat a cast iron skillet on the grill grates and sear the wings for 2-3 minutes per side until crispy.
- Remove the wings from the grill, and toss them in the prepared wing sauce.
- *For extra crispness place back onto the grill with the sear plate open for a few minutes. Be sure to monitor the wings closely during this step to avoid burning.
- Remove the wings from the grill, and finish by topping with sesame seeds and sliced green onions.
- Serve hot and enjoy!
