Kaulig Racing Skillet Pimento Cheese Cornbread

Taken straight from the shop crew over at Kaulig Racing, this Skillet Pimento Cheese Cornbread takes classic cornbread ingredients and mixes them with pimento cheese and Bossin' seasonings before being baked on the grill inside a cast iron skillet. The result is a smoky, savory cornbread with a beautifully charred crust that only cooking in cast iron can deliver.

Ingredients

  • 2 Tsp Baking Powder
  • 1/2 Cup Cornmeal, Yellow
  • 1 1/2 Cups Flour, All-Purpose
  • 2 Tbsp Pit Boss Homestyle Pork Rub
  • 1/4 cup sugar
  • 2 Cups Buttermilk, Low Fat
  • 2 Egg
  • 16 oz Pimento Cheese Spread
  • To Taste, Pit Boss Smoked Salt & Pepper Rub

Directions

  • Preheat the grill to 350°F. Place a cast iron skillet in the grill to preheat.
  • In a bowl, mix together the eggs, buttermilk, Pit Boss Homestyle Pork Rub, and pimento cheese spread. Add in the sugar, baking powder, cornmeal and flour. Mix until well combined.
  • With cooking gloves, carefully remove the cast iron skillet from the grill, grease it, and add the cornbread batter.
  • Grill for 25-30 minutes, or until the cornbread is golden and pulling away from the edges of the skillet.
