Directions
- Turn griddle on and set to medium high heat.
- Once the griddle is ready, warm up the leftover ham and scramble eggs on the cooktop, seasoning with the Pit Boss rub.
- Mix the ham and eggs together once both are fully cooked. Then, sprinkle cheddar cheese over the top.
- Heat up tortillas on the griddle and set aside.
- Divide the egg, cheese, and ham mixture between the tortillas and wrap them into burritos.
- Before digging in, place a layer of Oaxaca cheese onto the griddle to melt. Then, place the burrito onto the cheese so it sticks to the outside of the burrito.
- Let burrito rest, then enjoy!
