Directions
- Preheat pellet grill to 400°F.
- Assemble skewers by alternating mushrooms and artichokes, making sure to pierce through the thickest parts to prevent veggies from falling off.
- In a small bowl, combine the dressing with half of the freshly chopped herbs.
- Evenly coat each skewer with the herb dressing using a sauce mop, then sprinkle with BBQ rub. Allow to marinate for 10-15 minutes.
- Grill the skewers on the lowest grill rack until the mushrooms are cooked through, rotating as needed for even cooking.
- Garnish with remaining chopped herbs and serve immediately.
