Grilled Garlic Potatoes

You've found the ultimate side for your next steak night. Not much is better than a dinner of steak and potatoes. Especially when you make this grilled garlic version. Baby red potatoes are tossed with butter and onions and seasoned to perfection before going on the grill. Step it up a bit with shredded cheese and bacon bits!

Ingredients

  • 3 tbsp Butter
  • 1 Large Onion, Sliced
  • 2 Tbsp Pit Boss All Purpose GSP Rub
  • Red Potato, Baby
  • 3 Sliced Garlic, Cloves
  • 1 tsp Chopped Parsley, Leaves
  • 1 Cup Shredded Cheddar Cheese

Directions

  • Preheat the grill then increase the temperature to 400°F.
  • Cut and arrange potato slices, separated by onion and butter slices, on a large piece of commercial grade aluminum foil. If commercial grade aluminum foil is unavailable, layer aluminum foil until it is strong, or use a baking sheet.
  • Top potatoes with garlic, and season with parsley, and All Purpose GSP Rub. Place potatoes on the aluminum foil.
  • Place on the preheated grill and cook for 30-40 minutes or until potatoes are tender. Serve hot.
  • An option, you can sprinkle potatoes with shredded cheddar cheese, reseal foil packets, and continue cooking 5 minutes, or until cheese is melted.
