Directions
- Preheat your Pit Boss grill to 275°F
- Once your grill is up to temp, place an empty Dutch oven directly on the grill grates to heat up.
- Next, mix flour with diced pork, then melt butter in preheated Dutch oven. Add diced pork and sauté until pork is light golden brown.
- Once you have sautéed your pork, add the garlic and onion, then reduce the heat to medium and sweat the vegetables until they are translucent in color.
- Next, add the stock, cilantro, oregano, cumin, chilies, coriander, and canned tomato, then reduce the liquid by half before removing from the heat and seasoning with salt.
- Finally, serve over a bed of Fritos and garnish with smoked cheese and pickled onion.
