Directions
- Preheat your Pit Boss® Grill to 350°F. Once your grill reaches temp, open the sear plate and turn the temperature up to high.
- When flames appear through the open sear plate, start to broil the steak on all sides.
- Once your steak is seared on all sides, close the sear plate, and set your grill to 250°F.
- Next, place the steak on the top rack and smoke until you reach an internal temperature of 128-132°F.
- When your steak reaches the desired internal temperature, remove from the smoker and allow to rest for 5 to 10 mins before carving.
- Garnish with Balsamic reduction (vinegar, salt, chipotle puree, water, lime zest, garlic), broken basil, and cherry tomatoes before serving.
