Ingredients

  • 1 KC Cattle Company Tomahawk Steak
  • 1/4 cup Balsamic Vinegar
  • 1 1/2 Tsp Salt
  • 1/4 cup chipotle puree
  • 1/2 cup water
  • Zest of one lime
  • 1 garlic clove, micro grated
  • 4 broken basil leaves “for garnish”
  • 6 cherry tomatoes cut in half “for garnish”

Directions

  • Preheat your Pit Boss® Grill to 350°F. Once your grill reaches temp, open the sear plate and turn the temperature up to high.
  • When flames appear through the open sear plate, start to broil the steak on all sides.
  • Once your steak is seared on all sides, close the sear plate, and set your grill to 250°F.
  • Next, place the steak on the top rack and smoke until you reach an internal temperature of 128-132°F.
  • When your steak reaches the desired internal temperature, remove from the smoker and allow to rest for 5 to 10 mins before carving.
  • Garnish with Balsamic reduction (vinegar, salt, chipotle puree, water, lime zest, garlic), broken basil, and cherry tomatoes before serving.
