Ingredients
Half boneless beef ribeye (about 8 pounds)
Oil
Pit Boss BBQ rub of choice
Directions
Preheat your Pit Boss grill or smoker to 350°F.
Using butcher's twine, truss the rib loin in the center and on both sides. Doing so will ensure even cooking and keep the cap from separating from the eye.
Rub with oil of choice and evenly coat with your favorite BBQ rub. We recommend the Pit Boss Prime Beef Rub for a savory and smoky touch of flavor.
Place on the center rack and roast until it reaches an internal temperature of 110-115°F.
Remove from your grill and allow to rest for 15-20 minutes before removing the trusses and slicing.
