Trust us, trussing isn't as intimidating as it may look, and it ensures you'll get an even cook, every time.

Ingredients

  • Half boneless beef ribeye (about 8 pounds)
  • Oil
  • Pit Boss BBQ rub of choice

Directions

  • Preheat your Pit Boss grill or smoker to 350°F.
  • Using butcher's twine, truss the rib loin in the center and on both sides. Doing so will ensure even cooking and keep the cap from separating from the eye.
  • Rub with oil of choice and evenly coat with your favorite BBQ rub. We recommend the Pit Boss Prime Beef Rub for a savory and smoky touch of flavor.
  • Place on the center rack and roast until it reaches an internal temperature of 110-115°F.
  • Remove from your grill and allow to rest for 15-20 minutes before removing the trusses and slicing.
