Bell Peppers, Olives & Red Onion
Ingredients
3 14in. flour tortillas
8 oz. cooked chicken, chopped
3 slices cooked bacon, chopped
1 oz. fresh basil, sliced
1 cup pizza sauce
2 1/4 cup shredded mozzarella
Directions
Preheat your Pit Boss griddle to medium heat.
Place tortillas on the griddle and warm both sides.
Add 1/3 of a cup of pizza sauce to the center of each tortilla.
Evenly disperse the chicken, bacon, basil, and cheese over the top of the sauce.
Fold in the left and right sides of the tortillas into the center, then the bottom and top, to create a pocket. To seal the pocket, flip the folded tortilla over and allow the griddle heat to secure the pocket.
Flip your pockets every 2 to 3 minutes until both sides are crispy and golden brown.
Remove from the heat and let rest for a few minutes. Slice in half, marvel at the "cheese pull", and enjoy!
