Yes, you can make pizza on a griddle. A delicious twist on the classic, our Pizza Hack combines all the things you love about pizza in sandwich form. Pile on the sauce, cheese, and your favorite toppings for a meal everyone will love.

Ingredients

  • 1/2 cup pepperoni
  • 1 1/2 cup mozzarella (freshly grated)
  • Pit Boss GSP Rub
  • 1/2 cup butter (cubed, room temperature)
  • 1 tbsp garlic
  • 1 tbsp parsley (freshly minced)
  • 1/4 cup parmesan (freshly grated)
  • 1 Italian loaf
  • 1/2 white onion
  • 1 green pepper
  • 1 yellow pepper
  • 3 jalapenos, diced
  • 4 whole mushrooms
  • Vegetable oil
  • 1 can or jar of pizza sauce

Directions

  • Preheat the griddle to a medium heat.
  • While the griddle reaches temperature, dice the peppers, onions, jalapenos, and mushrooms.
  • Drizzle some vegetable oil onto the griddle, then add the vegetables and sprinkle some Pit Boss GSP rub on top. Stir the vegetables as they cook to allow them to cook evenly.
  • In a small bowl, add in the butter, parsley, Pit Boss GSP rub, and parmesan cheese. Mix until combined and set aside.
  • Slice open the Italian loaf lengthwise, without separating entirely.
  • Add about half of the butter mixture to the cut side of the bread. Place that side onto the griddle and toast until golden brown.
  • Next to the bread, spread out mozzarella onto the griddle in a rectangular shape that is the same size as the bread. Top the cheese with pepperoni and cook until the outside and underside of the cheese gets crispy and golden.
  • Carefully remove the bread from the griddle and place it down on top of the cheese then flip!
  • With the bread open, cheesy side up, begin adding the vegetables and spread some pizza sauce on top.
  • Close the sandwich and spread the remaining butter on the top of the bread
  • Create another bed of cheese and pepperoni next to the sandwich. When it gets crispy, place the loaf on top of it, buttery side down.
  • Flip the sandwich over, remove from the griddle, and enjoy!
