Deluxe Griddled Pizza Pockets

Pizza on the griddle? Yes! It's possible with this Deluxe Pizza Pockets recipe. Stuffed with chicken, bacon, and cheese and cooked on the griddle until they're crispy, golden brown on the outside, these delicious homemade pizza pockets are sure to hold down a spot in your weeknight dinner rotation or game day menu!

Ingredients

  • 3 14in. flour tortillas
  • 8 oz. cooked chicken, chopped
  • 3 slices cooked bacon, chopped
  • 1 oz. fresh basil, sliced
  • 1 Cup Pizza Sauce
  • 2 1/4 cup shredded mozzarella

Directions

  • Preheat your flat top griddle to a medium heat.
  • Place tortillas on the griddle and warm both sides.
  • Add 1/3 of a cup of pizza sauce to the center of each tortilla.
  • Evenly disperse the chicken, bacon, basil, and cheese over the top of the sauce.
  • Fold in the left and right sides of the tortillas into the center, then the bottom and top, to create a pocket. To seal the pocket, flip the folded tortilla over and allow the griddle heat to secure the pocket.
  • Flip your pockets every 2 to 3 minutes until both sides are crispy golden brown.
  • Remove from the heat and let rest for a few minutes. Slice in half, marvel at the "cheese pull", and enjoy!
