Cowboy Cornbread

There's regular cornbread, and then there's Pit Boss Cornbread. Baked in a wood pellet grill or smoker, our version has a bit of wood-fired flavor that makes it stand out from the rest. Fuel up with our Fruitwood Blend Hardwood Pellets for just the right touch of smoky flavor.

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 tsp Pit Boss GSP Rub
  • 1 1/4 Cup milk
  • 2 eggs
  • 1/2 Cup Sour Cream
  • 1/4 cup honey – depending on how sweet you want it
  • 1/2 cup melted butter
  • Pit Boss 10-inch cast iron skillet

Directions

  • Pre-heat smoker to 350°F.
  • Place the cast iron skillet in the smoker away from heat source while the smoker reaches temperature.
  • In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and Pit Boss GSP Rub.
  • Then add the milk, eggs, sour cream, honey, and melted butter. Mix everything together well until it is mostly smooth, but do not overmix.
  • Carefully remove the hot cast iron from the smoker. Pour the batter into the cast iron, then place cast iron back into smoker.
  • Let it cook for 30 to 35 minutes, or until it is totally set and golden brown on top.
  • Remove from smoker and let rest for 15 minutes, then enjoy!
