Directions
- Preheat your Pit Boss or pellet grill to 350°F
- In a mixing bowl, beat together butter and sugar with an electric mixer. Add in the egg and vanilla extract and mix until smooth and fully combined.
- In a different bowl, whisk together flour, cocoa powder, and baking soda.
- In a separate bowl combine Coca-Cola and buttermilk.
- Start to slowly combine the Coca-Cola mixture, flour mixture, and butter mixture together. Alternating the flour mixture and Coca-Cola mixture until all of the ingredients are fully combined. Fold in mini marshmallows.
- Prepare your round 13x9 inch pan by greasing and flouring the bottom and sides. Pour your prepared cake batter into the pan.
- Place your pan on the top rack of your grill and bake for 30-35 minutes, rotating occasionally.
- While the cake is baking, Make the glaze: Mix 2 cups of powdered sugar, 2 tbsp softened butter, 1 tsp vanilla, and 4 tbsp of milk. Mix until smooth and creamy- Add more milk if you want a thinner consistency.
- Once the cake is done pull it off the grill and let it rest for 10 minutes. While the cake is still warm, drizzle the glaze over the top.
- To garnish add fresh strawberries or smoked candied pecans, and serve!
