Directions
- Combine dressing, mayo, lemon zest and juice, oregano, pepper, and garlic in a mixing bowl. This will be your marinade.
- Add diced chicken to the marinade, leaving about 2 ½ cups aside for dressing the cooked spiedies, and let sit for about 1 hour.
- Preheat your Pit Boss to 400°F
- Skewer the diced and marinated chicken and season lightly with salt.
- Place the skewered chicken directly onto the grill grates of your pellet grill and cook for 20 mins, or until your chicken reaches an internal temperature of 165°F.
- Remove the chicken from the grill, dress with the marinade that was set aside, and garnish with peppadew peppers and chopped parsley.
