Chicken Spiedies

This summer, wood-fired chicken spiedies are on the menu! These quick and easy skewers are perfect for weekend barbecues or weeknight meals with the family.

Ingredients

  • 3 Cups Italian Dressing
  • 1 cup Mayo
  • Zest and Juice of 4 Lemons
  • 2 Tbsp Dried Oregano
  • 2 Tsp Black Pepper
  • 1 Tsp Granulated Garlic
  • 3 lbs Boneless, Skinless Chicken Thighs (Large Dice)
  • 10 Peppadew Peppers (Garnish)
  • 1/4 cup Chopped Parsley

Directions

  • Combine dressing, mayo, lemon zest and juice, oregano, pepper, and garlic in a mixing bowl. This will be your marinade.
  • Add diced chicken to the marinade, leaving about 2 ½ cups aside for dressing the cooked spiedies, and let sit for about 1 hour.
  • Preheat your Pit Boss to 400°F
  • Skewer the diced and marinated chicken and season lightly with salt.
  • Place the skewered chicken directly onto the grill grates of your pellet grill and cook for 20 mins, or until your chicken reaches an internal temperature of 165°F.
  • Remove the chicken from the grill, dress with the marinade that was set aside, and garnish with peppadew peppers and chopped parsley.
  • Enjoy!
