Chicken and Broccoli Meal Prep

Chicken and Broccoli meal prep with a wood-fired twist! This easy and delicious recipe is packed with authentic wood-fired flavor from the Pit Boss. Seasoned with Pit Boss Maple Chipotle BBQ Rub, this meal prep will become a staple in your recipe arsenal.

Meal Prep with Pit Boss

We're tackling mid-week hunger with our new recipe series centered around quick and easy meal prepped food. Whether you're packing lunch for a busy work or school day or stocking up on easy dinners for the family, you can prep all your favorite smoked foods ahead of time on the Pit Boss, without sacrificing that precious, wood-fired flavor.

Ingredients

  • 8 Chicken Legs/Thighs
  • Pit Boss Maple Chipotle Rub
  • Olive oil
  • 8 cups steamed rice
  • 40 oz. steamed broccoli

Directions

  • First, preheat your Pit Boss Grill to 400°F.
  • While your grill is heating up, coat the chicken legs/thighs on all sides with a thin layer of olive oil, followed by your favorite BBQ rub. For this recipe, we used Pit Boss Maple Chipotle BBQ Rub.
  • Once the chicken has been seasoned, place it, breast side up, directly on the grill grates. We recommend placing it on the top rack of your smoker if possible.
  • Cook to an internal temperature of 165°F, rotating every 10 mins for even color.
  • Remove from the smoker and let rest for 10-15 mins.
  • Once your chicken has rested, prepare your meal prep containers by portioning 1 cup of steamed rice, followed by 5 oz. steamed broccoli, and 1 chicken leg and thigh.
  • Make sure all contents in your containers have cooled completely before covering and placing in the fridge. You can then store this meal prep recipe in the refrigerator for 3-5 days, reheating as needed.
  • To reheat, place the chicken and broccoli meal prep container into the microwave and reheat for 1-2 minutes uncovered, in a microwave-safe container.
