Directions
- Set smoker to 400°F.
- Peel and thinly slice potatoes, about ½ inch thick.
- In a bowl, combine the heavy cream, garlic, thyme, and Pit Boss GSP Rub, then stir in the cheese until fully incorporated.
- Add the potatoes to the mixture and transfer to a 12-inch cast iron skillet.
- Place skillet in smoker and let cook for 1 hour.
- Let rest, then enjoy!
