Directions
- Preheat Pit Boss griddle to medium heat.
- Sear beef birria for 2-3 minutes until warm.
- Butter one side of each slice of bread and place butter side down on the griddle.
- Top both slices with shredded mozzarella and one slice of bread with beef birria, diced onion, cilantro, consomé, and more mozzarella.
- Sear the sandwich on each side until a golden crust forms.
- Serve with consomé for dipping.
