Bone-In Turkey Breast

Don't be intimidated by the word 'bone-in', because we're going to show you, step by step, how to trim, carve, and cut this turkey breast so you can be ready to impress whoever sits down at your holiday table. Just make sure you have a boning knife and kitchen scissors handy, and don't be afraid to get a little messy.

Ingredients

  • 7 lb. bone-in turkey breast
  • Oil
  • 1/4 cup chopped sage, thyme, and parsley (equal parts)
  • 1 tbsp garlic, minced

Tools

  • Kitchen scissors
  • Boning knife

Directions

  • Preheat your Pit Boss grill to 350°F.
  • Using scissors, trim the ribs and backbone of the chicken away from the breastbone.
  • Using a boning knife, trim excess skin away from top of the chicken breast.
  • Also using your boning knife, carve around the wishbone on both sides.
  • Using the scissors, cut the point of the wishbone away from the breastbone. The wish bone should be free enough to pull out and remove.
  • Rub the outside of the chicken breast with your oil of choice, season with salt and pepper, then coat evenly with herbs and chopped garlic.
  • Place on the center rack of your grill and roast to an internal temperature of 155°F, rotating every 20-25 minutes so the skin colors evenly.
  • Remove from grill and allow to rest for 15 minutes.
  • Using a clean boning knife, cut down the center on both sides of the breastbone, and continue to follow the bone in short strokes until the breast falls away from the breastbone.
  • Slice your turkey breast and place in a serving dish. Enjoy!
