Ingredients
7 lb. bone-in turkey breast
Oil
1/4 cup chopped sage, thyme, and parsley (equal parts)
1 Tbsp Garlic, Minced
Directions
Preheat your Pit Boss to 350°F.
Using scissors, trim the ribs and back bone away from the breastbone.
Using a boning knife, trim excess skin away from top of breast.
Also using your boning knife, carve around the wishbone on both sides.
Using the scissors, cut the point of the wishbone away from the breastbone. The wish bone will be free enough to pull out and remove.
Rub the outside of the breast with your oil of choice, season with salt and pepper, then coat evenly with herbs and chopped garlic.
Place on center rack of your grill and roast to an internal temperature of 155°F, rotating every 20-25 minutes so the skin colors evenly.
Remove from grill and allow to rest for 15 minutes.
Using a clean boning knife, cut down the center on both side of the breastbone, continue to follow the bone in short strokes until the breast falls away from breastbone.
Slice your turkey breast and place in serving dish. Enjoy!
