Directions
- Fire up your Pit Boss pellet grill and preheat to 250°F. If using a gas or charcoal grill, set it up for low, indirect heat.
- Score the fat cap of the loin in a cross-hatch pattern, then drizzle with olive oil, and season with Pit Boss Homestyle Pork Rub.
- Transfer the pork directly on the grates. Smoke for 1 ½ to 2 hours, until the internal temperature reaches 145°F.
- Remove the pork loin from the gill and rest for 15 minutes, before slicing and serving warm.
