Directions
- Preheat your Pit Boss smoker to 250°F. Kara used the Pit Boss Champion Charcoal Barrel Smoker for this recipe, but you can use any grill or smoker.
- Next, prepare your BBQ beef short ribs by removing the layer of hard fat along with silver skin underneath. Set your trimmings aside to use later. Removing the silver skin is optional, and depends on personal preference.
- Layer mustard thinly on your short ribs. Then sprinkle your favorite beef rub evenly on all sides.
- Take your trimmings and place them in an aluminum pan with a grate on top to render down to beef tallow.
- Place your ribs on the grill grates and begin to cook.
- Once the ribs have reached an internal temperature of 165°F, remove them from the grill.
- Remove the grill grates, and place the beef short ribs down into the pan of tallow. Remove any large fat chunks and discard. Cover with aluminum foil and place back on the grill. Smoke until they reach an internal temperature of 200°F.
- Once the ribs have reached the desired internal temperature, wrap a towel around the whole covered pan and place into a cooler or your microwave. Let rest for 1-3 hours, then enjoy!
