Barbecue Bear Burgers

This recipe uses freshly harvested bear meat from Virginia – and mixes in Pit Boss fan favorites spices and sauces. And if you like cheese, we recommend stuffing these burgers with fresh gouda cheese to maximize flavor. Smoke it up on your favorite Pit Boss grill using your favorite pellets, but we recommend Mesquite Blend for best results.

Ingredients

  • 1 lb. ground bear meat
  • Hamburger buns
  • 1/4 Cup Pit Boss Kentucky Whiskey Barrel BBQ Sauce
  • 2 Tbsp Pit Boss Memphis BBQ Rub
  • Pit Boss Sweet Heat Rub
  • 4 gouda cheese wheels

Directions

  • Add ground bear meat, Kentucky Whiskey Barrel BBQ Sauce, Memphis BBQ Rub into large mixing bowl and combine.
  • Divide the meat mixture into 4 even parts, and shape each around the gouda cheese wheels to create patties.
  • Coat each burger patty with Pit Boss Sweet Heat Rub.
  • Set grill temp to high (400°F).
  • Reverse sear the bear burger patties by following these steps: Open the sear plate on your Pit Boss and sear burgers until they have a dark brown color. Once the burgers are browned, close the sear plate and set grill temp to 300°F. Smoke until bear burgers have internal temp of 135°F.
