Ingredients

2 Tbsp Baking Soda
1 Tbsp Chinese Five Spice
1 Whole Thawed Duck
1 Granny Smith Apple, Peel, Core and Dice
1 Quartered Orange, Slice
2 Tbsp Pit Boss Champion Chicken Seasoning, Divided

Cooking Method

Instructions:
  1. Wash the duck under cold running water, inside and out, then pat dry with paper towel.
  2. Mix Champion Chicken seasoning and Chinese Five Spice together. Mix with baking soda for extra crispy skin. Season the duck, inside and out.
  3. Tuck the orange and apple slices in the cavity.
  4. When you’re ready to cook, turn your Pit Boss grill to “smoke” mode, let the fire catch and then set to 300 degrees F (149 degrees C) to preheat.
  5. Add duck to a roasting pan or directly onto the grill grate.
  6. Roast for 2 – 2 ½ hours or until the skin is brown and crispy and the internal temperature of the thigh is 160 degrees F (71 degrees C).
  7. Add foil loosely over the duck and let rest for 15 minutes.
