Pit Boss Game Day Playbook




It’s time for the Big Game Party and the only thing better than the commercials, is the food. You have the perfect Game Day menu. Now, inside this Playbook, you’ll find a step by step guide for grilling up each of the dishes just in time for kick-off.

Kickoff is at 6:30 pm ET. This playbook will have your dishes hot and ready by 6:15 pm ET.

Game Day Tips and Tricks

Prepping your meat in advance will save you valuable time. We recommend crafting the burger patties the night before. Along with, turning the drumsticks into lollipops and marinating the beef ribs the morning of; around 9-10am ET.

11:30 am ET

Start up your Pit Boss according to the manual and begin following the Smoked Sweet Heat Beef Rib recipe.

Whether you prepped the ribs in advance or need to prep them now, they should be good to go by the time your grill lights and comes up to 250°F.

2:40 - 3:40 pm ET

Check on your ribs somewhere in this hour, to see if they need to be rotated.

5:00 – 5:10pm ET 

Your beef ribs are cooking at a slightly higher temperature now. They should be finishing soon. Check for doneness according to the Smoked Sweet Heat Beef Rib recipe.

When they are they are fully cooked, pull them off the grill. Then, wrap and rest until party time.

5:25 pm ET

If you haven’t made your patties yet, start forming them. Then, place them in the fridge. 

Prepare the sauces for the lollipops according to the Champion Chicken Lollipop recipe.

5:55 pm ET

Grab your patties from the fridge and set them off to the side to relax for a few minutes.

Crank the grill temp up to 375°F; this is a suitable temperature for both the chicken and the burgers.

Check the doneness of your lollipops. If they have an internal temperature of 165°F, start glazing them. Then,

cook until the sauce sets. If they have not reached an internal temperature of 165°F, move on to the step below. Then, come back and check on the lollipops until they are ready to glaze and finish cooking.

Throw the patties on the grill and cook according to the Pepper Jack Bacon Burger recipe.

6:00pm – 6:05pm ET 

Flip your patties when ready.

Check the glaze on the lollipops. The grill temperature was set higher to accommodate the burgers; therefore, the sauce will caramelize much more quickly. If you are unsure whether or not the lollipops have finished, pull them off once they reach an internal temperature of 175°F.

Start gathering your burger buns and toppings.

6:10 pm ET – It’s almost game time.

Finish up your Pepper Jack Bacon Burgers, grab your Champion Chicken Lollipops, and bring out the Smoked Sweet Heat Ribs that have been resting for the last hour.  them off once they reach an internal temperature of 175°F.

6:15 pm ET
