Homemade usually tops any store-bought sauce and Buffalo Sauce is no exception! This smooth and rich sauce has the perfect amount of zip and tang, with classic buffalo flavors and a heat level you can control yourself. Note: It is recommended to use Hickory Hardwood Pellets with this recipe.

This recipe uses Pit Boss Sweet Heat Rub seasoning.

  1. Fire up your Pit Boss and preheat to 450° F. If using a gas or charcoal grill, set heat to high heat.
  2. In a small cast iron pan or non-stick sauce pot, heat hot pepper sauce, apple cider vinegar, Worcestershire sauce, cayenne, Pit Boss Sweet Heat Rub, and garlic over medium heat. Whisk until sauce begins to bubble, about 5-10 minutes.
  3. Remove sauce pot from heat and whisk in butter one cube at a time, stirring vigorously until combined into a thick sauce. (Note: it’s important to take pot off grill so that butter doesn’t melt. This can prevent it from emulsifying into a creamy sauce.) Serve hot over wings, grilled chicken or anything else.

When applying sauce to chicken wings: After grilling wings for 20 minutes baste with sauce, then cover and grill an additional 5 to 7 minutes. Then put the wings in a bowl and coat with the Buffalo Sauce. Shake the bowl around gently to combine or use a spatula to ensure every wing is coated.
