Ingredients

3 cups crushed Chips Corn Tortillas

2 grated Garlic, Cloves

2/3 Cup Ketchup

1 small grated Onion, Chopped

4 oz into sticks Pepper Jack Cheese, Sliced

2 Tbsp Pit Boss Competition Smoked Rub

1 lbs Pork, Ground

1/4 Cup Tomato Paste

1 Tsp Worcestershire Sauce

Meatloaf is one of those dishes people either love or hate. If you’re in the latter, we would like to argue that maybe you just didn’t experience this dish with the right recipe. This smoked meatloaf recipe is full of smoky and peppery flavors that really compliment the meat. Smoke ground beef for 3 hours and top with chipotle glaze for a meaty dish with a bite.

How Long to Smoke Meatloaf

At 250°F, it should take about an hour per pound of ground meat to smoke meatloaf. The meat is done when internal temperature has reached about 165°F.

Smoking a Meatloaf on a Pellet Grill

With the true convection cooking of a Pit Boss, smoking a meatloaf on a pellet grill is like cooking it in the oven, only better since you get the benefit of real hardwood flavor.

Meatloaf Glaze Ingredients

  • 2/3 cup ketchup
  • ¼ cup tomato paste
  • 2 teaspoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon chipotle pepper flakes
  • 2 Tablespoons Pit Boss Competition Smoked Seasoning

Meatloaf Ingredients

  • 3 cups seasoned corn chips, crushed
  • 3 eggs
  • 2 garlic cloves, grated
  • 1 small onion, grated
  • 2 pounds ground beef
  • 1 pound ground pork
  • 4 oz pepper jack cheese, cut into sticks

Note: It is recommended to use Competition Hardwood Pellets with this recipe.

  1. Preheat your Pit Boss Grill to 250°F.
  2. First make the glaze: in a bowl, combine the ketchup, tomato paste, vinegar, Worcestershire, chipotle flakes and Pit Boss Competition Smoked Seasoning. Whisk well to combine and set aside.
  3. In a large bowl, mix together the crushed corn chips, eggs, onion and garlic. Add 2/3rds of the glaze to this mixture, reserving the rest for glazing the meatloaf. Mix well to combine and allow to sit until the corn chips have hydrated.
  4. Add the ground beef and pork to the corn chip mixture and mix until everything is well distributed.
  5. Form the meatloaf into a log and push the sticks of pepper jack cheese into the center of the meatloaf and cover with the meat mixture. Loosely wrap in tin foil and poke holes in the foil with a knife to allow smoke to penetrate.
  6. Grill for 1 ½ hours covered, then remove the top half of the tin foil, glaze with reserved glaze, and grill for another 1 ½ hours or until the internal temperature is 165F.
