Ingredients


1/8 tsp Black Pepper

1/2 cup Cilantro, Chopped

1 tsp Extra Virgin Olive Oil

1 Jalapeno Pepper, minced

1/2 Lime, Juiced

1 cup Onion, Chopped

To Taste Pit Boss GSP Rub

1 lb Roma Tomatoes, Diced

1/2 tsp Salt

2 - 2 1/2 lbs Tri Tip Roast



Cooking Instructions


Santa Maria cattle ranches in California are the original home of tri tip – A flavorful, juicy cut of beef from the bottom sirloin. Once a butcher’s or “throw away” cut,  it can sometimes be hard to find.  Trust us though, it is worth seeking out.  This Smoked Tri Tip recipe uses a reverse sear to infuse wood fire flavor and get that deliciously seared char that is synonymous with beef cooked on the Pit Boss Grill. 

Wood Pellet Recommendation 

Pit Boss Oak Blend Pellets 

Note: This recipe uses Pit Boss GSP Rub.  

  1. Prep the pico de gallo:
  2. In a medium bowl, diced tomatoes, onion, jalapeno pepper and chopped cilantro.
  3. Stir in 2 Tbsp lime juice and lightly season with 1/2 tsp salt and 1/8 tsp black pepper, or season to taste. Enjoy right away or cover and refrigerate overnight.
  4. Cook the Tri Tip:
  5. Set Pit Boss Grill to 250°F.
  6. Brush entire tri tip with olive oil, and then coat generously with Pit Boss GSP. Once coated, place on the grill fat side down for approximately 90 minutes, until internal thermometer inserted in the center reads 125°F.
  7. Increase Pit Boss temperature to 400°F, and then open the sear plate. Sear each side of the tri tip 3-4 minutes, until internal temperature reaches 135°F for rare (More for desired level of doneness).
  8. Remove from heat and allow to rest for 10 minutes, and then slice thinly against the grain. Serve with fresh pico de gallo.
